Sauté finely chopped onions, garlic and ginger. Add to the pan diced mango, ketchup, worcestershire sauce, dark brown sugar, honey, cider vinegar, lime juice and jalapeños to taste. Season the mix with salt and pepper and simmer on a low heat. Puree until smooth.
Now this is where it gets messy. Massage the raw chicken thighs with the sauce before popping into the fridge, so it marinades overnight.
Once you’re awake and ready to party, take the chicken out of the fridge and roast in the oven until it’s just about cooked. Transfer it to the BBQ so the flavours can really come to life!
