Our Roasted Butternut Squash Salad was designed by chef Benn Hodges back in November. It took our team and customers by storm with it’s sweet and seasonal ingredients, and as it’s still one of our bestsellers here’s an insight into the chef’s inspiration behind the dish:
What makes it special?
A sweet and spicy combination! The ingredients are mixed with a homemade tomato and chilli jam to sweeten and add a slightly spicy kick to the salad. “It’s spiked with ginger and garlic and simmered with a little Tamari soy to bring out the savoury flavours.” - Benn Hodges. The mustardy vinaigrette adds a further savoury and slightly tangy taste, balancing the overall dish.
What inspired these flavours?
“The inspiration came from my passion for seasonality. Squash is great at this time of year, when roasted it’s deliciously sweet.” - Benn Hodges. Sprinkled into the mix are flaked almonds, sunflower, poppy and pumpkin seeds to add a distinct nutty taste and crunchy texture. All is combined with peppery Frisée salad leaves, plum tomatoes and cream cheese; a lot of ingredients, each with a unique and distinct flavour.
Thumbs up for being healthy
The dressing is made with extra virgin Rapeseed oil, which is rich in omega 3 and 40% less fat than olive oil. The nuts and seeds are nutritional heroes, offering protein, Vitamin E, calcium, fibre and fatty acids. Not to mention butternut squash is a great source of potassium!
